Directions for making Heavenly Tea Spelt Scones: 1/2 package Spelt Scone Mix (approx. 2-1/3 cups); 1/3 cup unsalted butter (chilled); 1/2 cup heavy whipping cream; 1 large egg; 1-1/2 teaspoons vanilla extract. Preheat oven to 400 degrees. Sift dry ingredients into a bowl. Cut in cubed butter until mixture resembles coarse crumbs. Stir together cream, egg, and vanilla. Add liquid mixture to flour mixture and stir until combined. Pat dough into a 1/2" thick circle on a lightly floured surface. Cut into pie wedges. Option #2: Using a floured 2-1/2" cookie cutter, cut out shapes from 1/2" thick dough and place on a prepared sheet. Gather up the scraps and repeat until all the dough is used. Tops can be brushed with a mixture of 1 egg blended with 1 teaspoon water, if desired. Bake in hot oven for 10-12 minutes, until lightly browned. Cool on wire rack. Store in airtight container. Makes about 12 scones.
